02 / Restaurant profitability consulting: Make More of What You Make.

Strong sales don’t always create a strong restaurant business.

Tempo helps restaurant operators understand where profit is being created, where it’s disappearing, and what changes can produce meaningful improvement—across financials, operations, technology, menu strategy and management.

The tension

Busy Isn’t The Same As Profitable.

Your dining room can be full, sales can be growing, and the bottom line can still be moving the wrong way—because profitability is decided by hundreds of small decisions across the business every day, from purchasing and scheduling to pricing, waste and management.

The challenge isn’t knowing your numbers. It’s understanding what’s driving them. And the answer is rarely just spending less: it’s knowing which levers create the greatest return without damaging the guest experience.

Symptoms

Does Any of This Sound Familiar?

  • Sales are growing, but profit isn’t.

    Revenue looks healthy. Cash doesn’t.

  • Food cost keeps creeping up.

You can see it happening, but the cause isn’t obvious.

  • Labor feels impossible to control.

Cut too much and service suffers. Spend too much and margin disappears.

  • Reports don’t change decisions.

You know what happened last month. You don’t necessarily know what to do tomorrow.

These aren’t four separate problems. They’re signals.

Common questions

Common Questions

Why is our restaurant busy but not profitable?
Sales are only one part of profitability. Labor, purchasing, waste, pricing, menu mix, occupancy and overhead all affect what remains. Understanding the gap requires looking at the economics and daily operation together.
How does Tempo identify opportunities to improve restaurant profit?
We examine the financial information alongside the operating decisions that create it. Depending on the situation, that can include labor deployment, food and beverage costs, menu contribution, pricing, purchasing, management routines and revenue opportunities. We then prioritize changes based on their likely business impact.
Does improving profitability always mean cutting costs?
No. Profit can improve through better pricing, menu contribution, purchasing, productivity, repeat visits and operating consistency. The right changes should strengthen the business while protecting the guest experience.
How much profit would a two-percentage-point margin improvement add?
Multiply annual revenue by 0.02. At $4 million in annual revenue, a two-percentage-point improvement would add $80,000 in annual profit if revenue stays the same. This is an illustration, not a forecast of what a particular restaurant will achieve. Try your own numbers in the Margin Impact Calculator.
